King oyster mushrooms: 250g
Black mushrooms: 50g
Fresh Rice noodle
1 teaspoon salt
1 teaspoon soy sauce
1 teaspoon sugar, ground pepper
1 cup cold water
2 tablespoon cooking oil
Purple basil, oregano, mint
Sauce: Wash mushrooms. Grind all the mushrooms, salt, soy sauce, 1 cup of cold water. Then put in a small pot. Add oil, sugar. Stir and simmer for 20 minutes (stirring occasionally to combine spices).
Tofu washed through water, cut into square pieces and fried until golden.
Ladle sauce into a small bowl, add lemon, pepper, and chilli depending on taste. Put the fried tofu on a small plate, garnish with herbs. Serve with fresh rice noodles
